OYSTER DRESSING

3 qt. soft bread crumbs

4 tsp. salt

½ tsp. pepper

1 pt to 1 qt. small oysters, whole or cut in small pieces

About ¾ c. oyster liquor (use stock or milk if not sufficient oyster liquor)

½ c. butter or turkey fat, melted

Combine all ingredients and mix well. Will fill a 14-lb. turkey. A 4-lb. chicken would require about 1/3 this amount.

OYSTER AND CELERY DRESSING

¾ c. fat

2 Tbs. chopped onion

3 Tbs. chopped parsley

1½ c. chopped celery

6 c. soft bread crumbs

1 pt. oysters, chopped

Salt and pepper to taste

Melt fat; add onion, parsley and celery and cook until tender. Add bread crumbs and heat well. Add oysters, seasoning and mix lightly but thoroughly. Fills a 10-lb. fowl.

CORNBREAD DRESSING

1 (16-oz.) pkg. dry cornbread mix

2 Tbs. butter

½ c. chopped celery

1 small onion

2 eggs, beaten

2 c. chicken broth

2 Tbs. dry sage
