What is a Gloucester tart? Chef Chris figures it out

With a lot of effort beforehand and a lot of work on September 2, the Gloucester Collaboration (GC) hosted the “Global Gloucester Day,” an event traditionally celebrated in Gloucester, England.

One of the events that was televised on this special day was the making of Gloucester Tarts in the Gloucester County Library kitchen. Chef Chris Thomas took some time trying to perfect making the Gloucester Tart as it should be, as the very old recipe called for ground rice.

Not being able to purchase this product, Chris began calling and emailing for some help. One chef in England replied and suggested rice flour, and it worked.

To keep everything authentic as possible, Chris searched for the proper pan. The original recipe refers to patty tins. In this country Chris located what was called a minced meat pan. It was perfect for the tarts. He even ordered and received the raspberry jam from England.
