Turnip recipes

MASHED TURNIPS WITH CHEESE

2 large fresh white turnips

3 Tbs. butter

4 oz. Swiss cheese

Freshly milled black pepper

Peel and chop the turnips into cubes and boil in salted water for around 30 minutes or until tender. Drain and mash well. Grate Swiss cheese and add to the turnips with the butter. Salt and pepper to taste. Stir well until cheese has melted. Serve hot.

TURNIP AND BACON CASSEROLE

 

1 lb. medium turnips

¼ lb. diced bacon

3 oz. diced onion

¼ pt. stock

½ oz. butter

½ oz. flour

¼ tsp. castor sugar

¼ tsp. sage

2 Tbs. flat leaf parsley, chopped

Salt

Pepper

Peel and chop turnips and cook in boiling salted water until tender; drain. In a large saucepan, add the butter and bacon and sauté for about 5 minutes. Add the chopped onion and stir well.
