GREEN TOMATO PIE Terry Smith August 24, 1989 1 basic pie crust 1 medium green tomato, sliced 1 large onion, sliced 1 large green pepper, sliced 2 tsp. oregano Salt to taste 4 oz. each: Cheddar cheese, Monterey Jack cheese, Mozzarella  Parmesan cheese for garnish Arrange tomato slices, onion and green pepper in pie crust, in that order. Sprinkle 1 tsp. oregano and salt lightly top of vegetables. Grate three cheeses and put on top of vegetables. Sprinkle with another 1 tsp. oregano over cheeses and then sprinkle with Parmesan cheese.
