CHILI

2 lb. hamburger, cooked
Salt, pepper, and chili powder to taste
1 pkg. McCormick Chili mix
2 onions, chopped
1 green pepper, diced
1 can green chilis
1 can diced tomatoes
1 lg. can kidney beans
2 cans diced tomatoes with green chilis

Cook until all is done.

BEANS AND HAM

1 bag pinto beans
2 bags navy beans
Soak overnight.

I use a Crock-Pot and old ham; as much old ham as you want and cook. Keep checking on the water as the beans use a lot of it! Serve with some cornbread. POTATO AND LEEK SOUP

3 leeks, trimmed and washed
5 baking potatoes, peeled and cut into small pieces
2 Tbs. canola oil
6 c. vegetable or chicken stock
Salt to taste
Juice of 1 lemon
½ c. fat-free half-and-half
Minced parsley

Slice the leeks lengthwise and rinse under running water, separating layers, to clean thoroughly. Chop the leeks into thin slices. Peel and chop the potatoes into small pieces. Cook leeks and potatoes in heated oil for about 10 minutes; add stock. Cook another 20 minutes, bring...
