New chef, new year for The Hatchery

Oyster Seed Holdings on Gwynn’s Island has a new chef for its outdoor eatery and a new oyster farm boat tour to offer the public this year. The grand opening for the summer will be at 5 p.m. tomorrow, Friday, May 17, at 425 Callis Wharf Road, Grimstead.

Mathews native Doug DeForge is the new chef for The Hatchery food truck, which will be open on weekends beginning tomorrow, with hours from 5 p.m. to sunset on Fridays, 4 p.m. to sunset on Saturdays, and noon to 4 p.m. on Sundays.

Oysters will still be front and center on the menu, whether roasted, fried, or raw, along with a variety of new compound butters for the roasted oysters and mignonette for the raw ones.

Other menu items include pulled pork barbecue sandwiches and tacos, as well as watermelon salad and Asian slaw. A kids’ menu includes hot dogs and peanut butter and jelly.

Along with these staples, DeForge said he’ll be trying some new recipes, as well. Drink selections include draft beer, wine, seltzer...
