Great nutrition from the smallest plants

Microgreens are young edible seedlings harvested shortly after they develop their cotyledon leaves (seed leaves) but before the true leaves appear. They are known for their concentrated nutrient content, potentially higher than full-grown plants.
A large selection of home-grown microgreens is what Valerie Query of Richmond has brought to Mathews Farmers’ Market. Valerie became acquainted with the local market after having often visited friends in Mathews.
Growing microgreens is a business Valerie has pursued for two years. It began when her husband William was having some medical problems. They looked for ways to change their eating habits, discovered microgreens, and their research began. “It was a learning experience. Each plant has a different time developing from seeds. If it is allowed to grow too tall it loses about 50% of its flavor. With trial and error, William suggested I begin selling the plants as I was growing more and more varieties, so I did.”
