ZINNIA LIMEADE 1/8 c. zinnia petals, tightly packed 4 c. water Zest from 1 lime 2 sprigs fresh mint leaves 1 c. lime juice 1 c. sugar Rinse zinnia petals and place in small saucepan. Add 1 c. sugar, 1 c. water, lime zest and mint. Heat mixture until sugar dissolves. (Don’t boil.) Remove from heat and let syrup cool 5 minutes. Strain syrup through colander. Add lime juice and remaining water by pouring through strainer that still contains boiled zest, petals and mint. Chill and serve over ice. Note: Can freeze ice with mint leaves in them. CANDIED OR CRYSTALLIZED FLOWERS Suggested Flowers: Apple or Plum Blossoms, Lilac Florets, Rose Petals, Scented Geraniums, Violas, Violets Rinse and dry edible flower blossoms separated from the stem. 1 extra large egg white, room temperature Few drops of water About 1 c. super-fine sugar 1 small paint brush A baking rack covered with waxed paper In small bowl, lightly beat egg white and water until the white shows a few bubbles.
