BAKED BUTTERNUT OR ACORN SQUASH

 

Cut squash in half and remove seeds. In seed well add 1 Tbs. butter. Add cinnamon, nutmeg and allspice to taste. Pour in some whipping (heavy) cream. Bake at 375°F. for 20 to 30 minutes.

 

SPAGHETTI SQUASH EGG CASSEROLE

 

1 medium spaghetti squash, cooked and scraped

1 lb. bulk Italian sausage

 6-8 eggs

 

Cook sausage and drain. Beat eggs. Put sausage, eggs and spaghetti squash into casserole dish and top with cheese. Bake at 350°F. for 45 minutes. MOCK COCONUT PIE WITH SPAGHETTI SQUASH

 

1 c. sugar

¼ c. butter, melted

1 tsp. vanilla

3 c. spaghetti squash

3 eggs

1 Tbs. lemon juice

1 tsp. coconut flavoring

1 9-inch baked pie crust

Coconut flakes, optional
