EGGS FLORENTINE

This recipe was created to present a dish that might have pleased President Franklin Roosevelt as the cook at the White House during his terms was noted for her bad cooking. It was common knowledge that guests invited for dinner at the White House would frequently dine before arriving in anticipation of “ghastly repasts.”

4 rashers of thin bacon
1 bag fresh baby spinach (6-oz.)
4 pieces of toasted bread or English muffin halves
¼ tsp. salt
¼ c. unsalted (6-oz.) butter, melted

Cook the bacon rashers until crisp using the microwave or cooked on the stove top; let cool and chop coarsely.

Hollandaise Sauce

1 Tbs. lemon juice
2 Tbs. water
3 egg yolks
¼ tsp. salt
¾ c. unsalted butter, melted

Combine lemon juice, water and salt in a medium bowl or pan. Add the egg yolks and set the bowl over a pan of simmering water being careful not to let bowl touch the water. Whisk the ingredients vigorously until the mixture starts to thicken a...
