Recipes with an Italian touch

SUNDAY GRAVY

(A recipe used in many dishes)

“Make enough to use for other meals during the week.”

In a large pot combine:

1 Tbs. olive oil

3 good sized sections of fresh garlic, grated or 1 Tbs. jarred garlic

Cook garlic in oil on low heat. Too high heat will burn garlic;

4 leaves fresh basil, hand torn or small palm size, dry Italian seasoning rubbed in palm to “wake up.”

If you want to use meat add it here.

¼ c. red wine

Add above ingredients to oil/garlic mixture and turn heat to medium. Add:

2 large cans crushed tomatoes

2 large cans whole tomatoes with juice; hand-squeeze the tomatoes

1 small can tomato paste (optional)

Bring to slow boil then lower heat and cook slowly for 1 hour or more.

P.S. ‘Gravy’ to an Italian cook means a red tomato sauce.

6 pieces thin sliced steak (chicken or veal)

1 c. Parmesan/Romano or Parmesan/Asiago

1 c. Italian bread crumbs

1 Tbs. Italian seasoning
