THAI PEANUT BUTTER CHICKEN WRAPS
½ c. Jif Creamy Peanut Butter or Jif Extra Crunchy Peanut Butter
½ c. Pad Thai sauce*
½ c. chopped green onions
4 burrito size tortillas
1 (1-oz.) pkg. fully cooked grilled chicken breast strips, cut into bite-size pieces or
1 ½-c. cooked chicken
2 c. shredded lettuce
Divide the chicken, onions, peanut butter, Thai sauce and lettuce among the 4 tortillas filling the tortilla. Wrap the tortilla and enjoy.
* Pad Thai sauce is often located in the Asian foods section of many grocery stores. HOMEMADE PEANUT BUTTER
1 c. roasted, shelled peanuts
1½ tsp. peanut oil
¼ tsp. salt (omit salt if salted peanuts are used)
Place all ingredients in blender. With the lid secured, blend until mixture becomes paste-like or spreadable (3 to 4 minutes). If necessary, stop the machine and use a rubber spatula to scrape mixture from the sides of the container back into contact with the blade. Continue blending...
