HONEY BUTTER

¼ c. honey

2 Tbs. soft butter

2 Tbs. whipping cream

Mix all ingredients together and beat well. Delicious with waffles or toast.

Note: Before measuring honey, coat the container with oil or with non-stick spray.

PEPPERY BEEF STEAK

Virginia State Fair, Oct. 10, 1985

2 beef blade steaks, cut ¾-inch thick

½ c. brandy

¼ c. water

¼ c. lemon juice

¼ c. salad oil

2 Tbs. sugar

1 tsp. onion salt

1 tsp. salt

2 Tbs. cracked black peppercorns

Combine brandy, water, lemon juice, oil, sugar, onion salt and salt. Place steaks in utility dish or plastic bag. Add marinade, turning to coat. Cover dish and marinate in refrigerator 6 to 8 hours or overnight, turning at least once. Remove steaks from marinade and press crushed peppercorns into surface of both steaks.
