MINA’S “LIGHT AS AIR” MUFFINS

In a large bowl, cream together 1 Tbs. unsalted butter and 1 Tbs. sugar. Beat in 2 egg yolks until the mixture is light. Into a bowl, sift together 2 c. sifted all-purpose flour, 1 Tbs. baking powder and ¼ tsp. salt and stir. Add to this another egg and a cup of milk. In another bowl, beat 2 large egg whites until they are stiff and hold their peaks and fold them gently into the batter. Spoon the batter into a greased muffin pan and bake the muffins at 350°F. for 25 minutes.   

CHOCOLATE CARAMELS

1 c. milk
1 c. molasses
1 small c. butter, size of an egg
2 c. sugar
½ lb. chocolate
1 tsp. flour
2 tsp. vanilla

Combine milk, molasses and butter and let boil until butter completely melts, then add 2 c. white sugar, ½ lb. chocolate and a teaspoon of flour well mixed in a little water or milk. Let it all boil for 30 minutes but after it has boiled 10 minutes, add 2 tsp. full of vanilla, then pour into flat ...
