GREEKZZA 

Spinach Spread

A handful of fresh spinach

¼ c. cheese, shredded

3 Tbs. Greek salad dressing (I use Ken’s)

½ pkg. cream cheese (softened), 4 oz.

Pizza and Toppings

1 refrigerated pizza dough

1-2 cooked and pulled/chopped chicken breasts

4 Tbs. Greek dressing

Kalamata olives and feta cheese 

Put pulled chicken in a baggie with the 4 Tbs. of dressing for a quick marinade. Spread the pizza dough onto a greased baking pan and bake at 350°F. for 10 minutes. Combine all spinach spread ingredients in a food processor and mix to a smooth consistency. If you do not have a food processor, just chop the spinach well and combine with other spread ingredients.  You’ll get the same flavor and a more rustic look. Remove the pizza dough from oven. Spread the spinach mixture and top with olives, chicken, and feta. Return to the oven at 350°F.for an additional 12-15 minutes. Cut and serve! ALY’S POUND CAKE AND LEMON SAUCE
