Recipes from a Mobjack chef

SHRIMP CAKES

1 lb. large shrimp

4 oz. mozzarella cheese, grated

1 large egg

¼ c. mayonnaise

2 Tbs. fresh parsley, finely chopped

½ tsp. salt

1/8 tsp. pepper

¼ c. flour

Cut shrimp in pea size. Add all other ingredients except flour. Mix well, then add flour. Make patties and fry.

 

PERFECT BEEF TENDERLOIN

Clean beef tenderloin (remove silver skin, etc.) Rub with olive oil. Salt and pepper all sides. Cook at 475°-500°F. for 10 minutes. Reduce heat to 350°F. Check every 10 minutes until meat thermometer reads 125°-130°F. Remove immediately and let rest for 10 minutes before slicing. Meat will be medium rare.  

FLANK STEAK MOHR

6 cloves garlic

1 Tbs. whole thyme

1 tsp. cayenne

½ c. soy sauce

4 Tbs. Worcestershire sauce

2 Tbs. oil

1/3 c. juice

2 tsp. salt

1 tsp. pepper

Marinate flank steak for 2 hours, then grill to medium rare.
