CHESAPEAKE QUICHE

Stuff ya need

2 deep dish pie crusts

1 lb. crabmeat

12 oz. shredded cheese

1 lb. bacon

1 onion diced

6 diced mushrooms

1 red pepper, diced

2 stalks celery, diced

12 eggs

2 c. heavy whipping cream

½ c. frozen spinach, thawed and drained

Old Bay Seasoning to your liking

Preheat the oven to 375°F. and put the pie crust in to brown (15 minutes). Mix the eggs and cream till smooth with a whisk and set aside. Cut bacon into tiny pieces and fry in black iron skillet until crunchy. Remove and set on paper towel. Use the grease to sauté crab, onion, red pepper, celery and mushrooms. Remove pie crust from oven, put some spinach in bottom and add the sautéed stuff from the skillet (drain the grease and don’t overcook the stuff). Now pour the egg and cream into the pies.
