A  SIMPLE SYRUP

This syrup can be used in fruit drinks, punch and cocktails

2 parts sugar
1 part water

Bring water to a boil. Dissolve the sugar into the boiling water, stirring constantly. Once the sugar is dissolved completely, remove the pan from heat. Do not allow the syrup to boil for too long or the syrup will be too thick. Allow to cool completely and thicken, then bottle. This simple syrup can be infused with any flavor you desire.

PERFECT ICED TEA

8 tea bags of any good quality black tea
1 medium lemon or orange
8 c. simmering water
Ice
Rich simple syrup if you desire sweet tea

Place tea bags in a large heat-proof pitcher. Use a vegetable peeler to strip the peel from the lemon or orange, avoiding as much of the white pith as possible, and add the peel to the pitcher. Pour the simmering water into the pitcher and let it steep for at least 5 minutes. Remove tea bags and discard. Refrigerate the tea until cool.
