GRILLED PORK CHOPS W/PARMESAN POTATO & GREEN BEANS

1 small potato

1 tsp. chopped onions

1 tsp. olive oil

¼ c. tomato sauce

1 Tbs. grated Parmesan cheese

1 pork chop (3 oz.)

1 c. green beans

Preheat oven 450°. Dice potato in small cubes, in baking pan add and drizzle olive oil, add tomato sauce, bake 15 minutes until potato is soft, add pork chop cook another 15 minutes until chop is cooked through.

Serve with grated cheese and green beans. Add salt and pepper to taste.

SOUTHWESTERN SCRAMBLERS

¼ c. chopped colored peppers

2 eggs

2 Tbs. grated Cheddar cheese (low-fat)

¼ c. chopped lean ham

1 tsp. chopped onion

½ diced tomato

In saucepan sauté peppers and onion ’til tender, add chopped ham, add eggs and stir to scramble, place on serving plate topped with cheese.

Garnish with diced tomato and serve with 1 piece whole wheat toast.
