TACO MEAT CASSEROLE
The Pure Food Club of Jackson Hole Historical Recipes
1 lb. ground beef
1 pkg. taco seasoning
2 14-oz. cans tomato sauce
1 12-oz. pkg. corkscrew noodles
1 15-oz. can corn, drained
Grated cheddar cheese
Brown ground beef. Drain and add taco seasoning. Boil noodles until tender. Mix together meat, noodles, corn and tomato sauce. Bake, uncovered, in large casserole at 350°F. for 40 minutes. Sprinkle with enough grated cheese to cover top of casserole; return to oven until cheese is melted.
HOLIDAY CITRUS SWEET POTATOES
6 large sweet potatoes, about 4½ lb.
1 20-oz. can pineapple chunks
1 Tbs. plus 2 tsp. cornstarch
2 Tbs. dark brown sugar
1 c. orange juice
1 11-oz. can mandarin oranges, drained
1 c. dried cranberries
