SALAD AT RUTH’S HOUSE

2 pkgs. beef Ramen noodles

2 pkgs. chopped cabbage (equal to one head of cabbage finely chopped)

1 c. sunflower seeds

1 c. toasted sliced almonds

1 bunch green onions, chopped

Mix together for dressing:

1 c. oil

1/3 c. cider vinegar

½ c. sugar

Microwave 1 minute.

2 seasoning pkgs. from Ramens Crunch uncooked noodles and mix with sunflower seeds and almonds.

When ready to serve, mix cabbage and onion with crunched noodle mixture and mix in dressing.

SWEETENED CONDENSED MILK

1 c. milk powder

2/3 c. sugar

½ c. boiling water

3 Tbs. butter

Combine in blender and refrigerate until chilled.

 

COLD STRAWBERRY SOUP

1½ c. water

¾ c. light-bodied red wine (rosé)

½ c. sugar

2 Tbs. fresh lemon juice

1 stick cinnamon

2 qt. strawberries, hulled, puréed (reserve a few for garnish)

1 c. heavy cream

1/3 c. dairy sour cream or fat-free yogurt
