DEVILED EGGS WITH A FLAIR

The following recipe for Deviled Eggs with a Flair is offered by the Virginia Egg Council and the American Egg Board to get you started on a renewed love affair with the many variations of deviled eggs. With piquant goat cheese, elegant prosciutto, and spicy sriracha sauce and Dijon mustard, what’s not to love!

12 hard-cooked eggs, peeled
4 oz. soft goat cheese, at room temperature
1/3 c. mayonnaise
3 Tbs. minced gherkins or cornichons
1 Tbs. sriracha sauce
2 tsp.  Dijon mustard
½ tsp. garlic salt
¼ tsp. onion powder
2 oz. prosciutto, chopped into small pieces
2 tsp. chopped fresh chives

Slice eggs lengthwise in half. Remove yolks; place in a medium bowl. Add goat cheese, mayonnaise, gherkins, sriracha sauce, mustard, garlic salt and onion powder. Mash until well blended.
