MATHEWS LIONS CLUB CHILI
2 lbs. ground burger
1 med. white onion (chopped)
3 jalapeños (seeded and chopped)
5 Tbs. black pepper
7 Tbs. chili powder
1 Tbs. garlic powder
2 15.5-oz. cans drained kidney beans (save liquid in case more juice is needed)
2 15.5-oz. cans drained pinto beans (save liquid)
2 15.5-oz. cans drained black beans
1 29-oz. can tomato sauce
2 14.5-oz. cans diced tomatoes (can use ones with seasonings for more flavor)
1 Tbs. smoked, roasted habañero pepper (the best is local grown!) for added HEAT (optional)
Brown first three ingredients with 4 Tbs. chili powder and 3 Tbs. black pepper; drain. In large pot combine everything else and simmer for an hour. More chili powder and black pepper can be added to your taste. The drained bean juice can be added if more juice is required. Serve with shredded Mexican cheese blend and regular Fritos chips; this is where your salt comes from. Best if eaten the next day to allow seasonings to sink in! KNIGHTS OF COLUMB...
