VANILLA WAFER CAKE

2 sticks margarine (softened)

1 (12 oz.) box vanilla wafers (crushed)

2 c. sugar

6 eggs

½ c. milk

1 (7 oz.) pkg. grated coconut

1 c. pecans (chopped)

1 tsp. vanilla

Cream margarine and sugar.  Add eggs one at a time beating well after each. Add crushed vanilla wafers, milk, coconut, pecans and vanilla. Beat well. Pour and bake in greased and floured tube or Bundt pan at 300°F. for 2 hours. Test to make sure it is done

 

LEMON BLUEBERRY POUND CAKE

2 sticks butter, softened

3 c. sifted flour

3 c. sugar

6 jumbo eggs, room temperature

½ c. evaporated milk, room temperature

1 tsp. baking powder

2 Tbs. flour for dusting berries

½ c. sour cream + 1 Tbs. 

¼ c. milk

2 Tbs. lemon extract

1 large lemon, zested

Juice of 1 large lemon

1 tsp. salt
