BAKING POWDER BISCUITS

Janet Burgess used this recipe for all her 4-H biscuit demonstration contests. She won grand prize in each county and district event and was eventually the Bread Record Book National winner, earning a $500 college scholarship.

(This amount almost paid for an entire year’s tuition, room and board in 1967 at Madison College. Her daughter Kimber-Leigh used this recipe to win the Broward County, Fla., bread championship.)

2 c. flour, sifted
½ tsp. salt
1 Tbs. sugar
3 tsp. baking powder
¼ c. shortening
2/3-¾ c. milk

Preheat oven to 450°F. Measure and sift dry ingredients together. Blend in shortening. Stir in milk. Turn out on floured board and knead 10 times. Roll out ½” for high biscuits or ¼” for crisp. Cut. If you twist the biscuit cutter the biscuits will turn out lopsided. Place on an ungreased cookie sheet, close for high soft, farther apart for crisp biscuits. Bake for 10-12 minutes.
