BROWN SUGAR POUND CAKE

This cake was made by Libby Christian for the 2014 Guinea Jubilee; its slices proved to be a very popular sale item.

1 lb. brown sugar, dark
1 c. white sugar
1½ c. butter
6 eggs
3 c. flour
1 c. sweet milk
1 tsp. maple flavoring
1½ tsp. baking powder
1 tsp. salt
¾ to 1 c. walnuts, optional (English)

Cream sugar and butter, add eggs and mix. Add dry ingredients; do not over beat. Add flavoring and nuts. Bake at 300ºF. for 1½ hours. CRAB CAKES

1 lb. crab meat
1 Tbs. or more Old Bay seasoning
½ tsp. salt
1 Tbs. mayonnaise
1 Tbs. chopped parsley
1 egg, beaten
¼ tsp. dry mustard
2 slices bread, crust removed and soaked in milk

Mix ingredients and shape into cakes. Place on plate and put in refrigerator 20 to 30 minutes to set up. Fry quickly in a mixture of oil and butter until brown on both sides.
