A bagel is round and has a hole and is made from a yeasted dough which is boiled and then baked in a very hot oven. It can be covered with sesame seeds, poppy seeds, cinnamon, all the seasonings or nothing at all. The bagel originated in 17th century communities in Poland, evolving from earlier ring-shaped breads. The bagel arrived in the United States with Jewish immigrants from Poland in the late 19th century, long before it was smeared with cream cheese and topped with lox, capers, tomatoes and thinly sliced red onions. It was sold on the streets of New York City’s Lower East Side, stacked up on poles or from strings for people to buy. It was simple comforting peasant food. The Yiddish word for bagel is beigel.
