Recently a friend brought by three cookbooks published in the past by churches and organizations in the Guinea area of Gloucester. They are full of many delicious recipes. We decided to bring you a selection of dishes that reflect the local products of land and sea, recipes that have probably been made in Guinea for generations. Dig in! First Morning Star Baptist The first group of recipes comes from a cookbook put out some years ago; we could not find a date. Its title is “Family Favorites: Homecoming Committee of First Morning Star Baptist Church.” CLAM CHOWDERCalvin Randall 1 quart chopped clams6 diced potatoes1 small onion, choppedWater1 stalk celery, chopped6-8 slices baconSalt and pepper Brown bacon. Add bacon and drippings to a large saucepan. Add celery, potatoes, onion, water (desired amount), salt, pepper and clams. Cook until potatoes are done. Serves 6 to 8. CLAM FRITTERSAudrey G.
