6-8 lb. turtle meat

1 Tbs. baking soda

4 to 5 strips raw bacon

6 eggs

Salt and pepper to taste


Cook turtle meat in a kettle covered with water, with 1 Tbs. baking soda, for 2 hours. Drain and wash the kettle with the turtle meat with clear water and to this put 4 or 5 strips of raw bacon. Cook for another 2 hours. Drain and let cool. When cool, debone and dip into a batter made of the 6 eggs, salt and pepper and flour which has been mixed well and made into the consistency of your choice. Fry in hot oil. Lock the door, roll up your sleeves and dig in. Save the small pieces of turtle meat that are too small to bread for turtle soup. Put them in a container and freeze so you can use at a later date.
