ZUCCHINI PANCAKES
Makes a great side dish for dinner.
Over a large bowl, using the large side of a box grater, grate 2 medium zucchinis (about ¾ lb.)
Once grated add:
2 eggs, lightly beaten
½ c. flour
1 tsp. onion powder
1 tsp. kosher salt
1 tsp. baking powder
½ tsp. pepper
Stir to combine. Heat a large fry-pan over medium heat and melt ½ Tbs. butter and ½ Tbs. olive oil. When butter and oil are hot but not yet smoking, drop heaping spoons of batter into the pan and shape into a pancake form. Cook about 4-5 minutes on each side or until browned.
