ISRAELI CRAB SALAD

First place winner in salad category and Grand Prize winner

Claudia Riley, Crisfield, Md.

1 lb. crabmeat

3 tomatoes, chopped

2 cucumbers, chopped

1 green pepper, seeded and chopped and peeled

¼ c. parsley (curly), chopped fine

1 small onion

Salt and pepper to taste

Feta cheese to taste

Juice from large lemon

6 Tbs. olive oil

Black olives

Chop all vegetables. Mix, adding salt and pepper and cheese. Mix lemon juice from large lemon and olive oil. Put some on crab. Mix rest in salad. Place salad on plate. Add crab in center on top. Dress with black olives.
