Lime influenced recipes

KEY LIME PIE

Pie Crust

 

1 1/3 c. graham cracker crumbs

1/3 c. sifted confectioners’ sugar

6 Tbs. unsalted butter, melted and cooled

Mix all ingredients together and press the mixture into a pie plate to form a crust. Bake in a 350°F. oven for 10 minutes until lightly browned. Cool on wire rack.

Pie Filling

4 egg yolks, beaten until light in color

14 oz. can sweetened condensed milk

¼ c. lime juice

½ tsp. cream of tartar

¼ c. lime juice

To beaten egg yolks add the condensed milk, ¼ c. lime juice and cream of tartar. Mix and then add the other ¼ c. lime juice and mix well. Pour into baked pie shell and bake at 325°F. until it sets, about 10 to 15 minutes. Freeze for at least 3 hours.

Meringue

4 egg whites

¼ c. sugar

Beat egg whites with the sugar until stiff. Spread over pie and bake at 450°F. until meringue is golden.
