The flavor combination in the slaw dressing is fantastic! It is a bit spicy, but you can adjust the amount of horseradish to your taste. For a shortcut get sliced deli roast beef and slaw mix in the produce section.
½ c. plus 6 tsp. mayonnaise
1 tsp. caraway seeds
2 Tbs. lemon juice
Salt and pepper to taste
2 tsp. plus 1 tsp. prepared horseradish
3 c. finely shredded cabbage
1 clove garlic, minced
6 French Bread Rolls, Bolillos or Hard Rolls
1½ lb. thinly sliced rare roast beef
In a large bowl mix ½ c. mayonnaise, lemon juice, horseradish, garlic, caraway seeds and salt and pepper. Add the cabbage and toss to coat. Spread the bottom half of each roll with 1 tsp. remaining mayonnaise. Top with roast beef and then the slaw. Place top halves of rolls on top. Wrap in foil and refrigerate until ready to eat.
