‘I have lots of energy’
Peter’s decision to become a vegan did not come until about a year ago. "I was having some heart problems. Following a lot of examinations and tests, it was decided I needed bypass surgery. A friend of mine suggested I read "Prevent and Reverse Heart Disease" by Caldwell B. Esselstyn Jr., M.D. Reading Dr. Esselstyn’s book convinced me I would not have the surgery and I changed my eating style according to his protocol. I am now a true vegan. That means no meats, no dairy products, no fats, no fish, etc. It has been a complete turnaround to what my diet used to be, but I have not deviated from the diet since I began. My health has improved. I’ve lost 40 pounds and I feel good and have lots of energy."
Peter says he eats lot of fresh vegetables. "I have three salads a day, before I eat anything else, consisting of all sorts of greens, spinach, lettuce, kale, etc. I’ve even created my own salad dressing."
