EGG SALAD
12 hard-cooked eggs, chopped
½ c. celery, diced
2 green onions, diced
2 Tbs. chopped sweet pickle or relish
½ tsp. dried dill weed
½ c. mayonnaise
2 to 3 tsp. yellow mustard or Dijon
1/8 tsp. salt
¼ tsp. fresh ground black pepper
1 Tbs. chopped fresh parsley
Combine the first five ingredients in a large bowl and set aside. Combine mayonnaise and next three ingredients; fold into egg mixture. Sprinkle with parsley. Salad can be chilled, covered, up to 24 hours.
