A splash of lime will lighten summer’s heat
Where would the caipirinha, gin and tonic, margarita, mojito, tequila and limeade be without the lime? A Key lime pie is one of America’s favorite pies. The leaves of some limes are an important seasoning in Pacific Rim cuisine as are dried limes in Persian cuisine. You can easily substitute limes for lemons in any dish. Limes seem to have no limit in the world of creative cuisine.
The main limes used in the United States are of two varieties. The Persian or Tahitian is the principal supermarket lime and the Key lime, also known as Mexican Lime, is a sweeter, smaller lime used especially in Key lime pie.
